CRM2013: EMail Configuration Madness

We have CRM2013 deployed, but we are having a number of issues with email configuration. Some of these problems have been down to security and not getting the correct settings, but we are still having issues and I've now decided to go back to basic and start again.

We are trying to get the Email Router working for outbound mail (as not all our users have Outlook available). At some point other colleagues have tried getting the Server-Side sync working rather than e-mail router.

Now I've got involved I want to return to what I know, and that's the good old Email Router. The question I have is do you still need an "Email Server Profile" setting up in CRM if you're going to use the email router service. The documentation is ambiguous on this matter with the following paragraph suggesting you do, but is this only for Server-Side Sync?

"Email server profiles in Microsoft Dynamics CRM store settings that are used by server-side synchronization to connect to an email server and process email for the associated mailboxes. You must configure at least one email server profile to process email for your CRM organization. Depending on the complexity of your organization’s email system, you may have to create multiple email server profiles."

What is the latest opinion on Email Router vs Server-Side Sync and management?Any pointers gratefully received.
